Vegetarian fattoush chip nachos

Ingredients

½ lb.
Fattoush Zaatar and Thyme chips

1 can
pinto beans

1 cup
grated cheddar cheese
250 mL
1 cup
grated Monterey Jack
250 mL

red bell pepper, seeded and diced

avocados, mashed
⅓ cup
green onions, chopped
75 mL
¼ cup
fresh cilantro, chopped
60 mL
1 cup
homemade or store-bought salsa
250 mL

Directions

Step 1
Preheat oven to 200 °C (400 °F).
Step 2
Spread chips over a parchment-lined baking sheet. Top with beans, cheese and red pepper. Bake for 10–15 minutes.
Step 3
Top with mashed avocado, green onions and cilantro. Serve with salsa.
