white chocolate chips

Mascarpone Icing
½ cup
mascarpone cheese
125 mL
1¾ cup
icing sugar
430 mL
½ tsp.
vanilla extract

Directions
Step 1
In a large bowl, combine all wet ingredients until smooth.
Step 2
Add dry ingredients and mix just enough for the dough to hold. Stir in white chocolate chips.
Step 3
Cover and refrigerate for at least 30 minutes (or overnight, if time permits).
Step 4
Preheat oven to 180 °C (350 °F) and line baking sheet with parchment paper.
Step 5
Form dough balls and place on baking sheet, spacing them out.
Step 6
Bake for about 11–15 minutes, or until cookies are golden brown on the edges but still soft in the centre.
Step 7
Meanwhile, prepare icing by combining all ingredients until smooth and creamy.
Step 8
Serve cooled cookies with icing, or warm if you can’t wait.
