chicken breasts marinated in Ferme des Voltigeurs Greek
FOR TZATZIKI
2 cups
plain Greek yogurt
500 mL

cloves garlic, minced
1
English cucumber, diced
2 tbsp.
fresh chopped dill
30 mL
6
mint leaves, chopped
Salt and pepper, to taste
EGG WASH
1
egg yolk
2 tbsp.
butter
30 mL
Directions
Step 1
Preheat oven to 180 °C (350 °F).
Step 2
Place chicken breasts in an oven-safe baking dish and bake for 30 minutes.
Step 3
In a bowl, combine all tzatziki ingredients and store in refrigerator.
Step 4
Remove chicken from oven and cut into small pieces. Let cool.
Step 5
On a floured work surface, roll out the shortcrust pastry until it is about 3 mm thick. Using a bowl, cut 8 circles of about 20 centimetres in diameter.
Step 6
Brush edges of circles with egg wash. Place about ¼ cup of chicken in each circle. Fold dough in half to form half circles. Using your fingers or a fork, squeeze edges together to seal dough.
Step 7
Place empanadas on a parchment-lined baking sheet. Brush with remaining egg wash and bake for 30 minutes or until golden brown. Let cool and serve with tzatziki.
