- DRY INGREDIENTS
- 1 cup
- unbleached all-purpose flour
- 250 mL
- 3/4 cup
- sugar
- 180 mL
- 1/2 tbsp.
- baking powder
- 7.5 mL
- A pinch of salt
- WET INGREDIENTS
- 1/2 cup
- milk
- 125 mL
- 1/4 cup
- vegetable oil
- 60 mL
- 1
- egg
- 1 tsp.
- vanilla extract
- 5 mL
Directions
- Step 1
- Preheat oven to 180 °C (350 °F). Butter 6 muffin moulds.
- Step 2
- In a bowl, mix together all dry ingredients.
- Step 3
- Add wet ingredients and mix well. Set aside.
- Step 4
- Place a small cube of butter, 15 mL (1 tbsp.) frozen blueberries and 5 mL (1 tsp.) brown sugar into each cup of the muffin tray.
- Step 5
- Cover with cake mixture.
- Step 6
- Bake for 20–25 minutes (or until a toothpick inserted comes out clean).
- Step 7
- Serve hot with ice cream, if desired.
