Upside-Down Blueberry Muffins

Ingredients

TOPPING

brown sugar

cubes of butter
6 tbsp.
Bleu & Bon frozen blueberries

Ice cream, to serve (optional)
DRY INGREDIENTS
1 cup
unbleached all-purpose flour
250 mL
3/4 cup
sugar
180 mL
1/2 tbsp.
baking powder
7.5 mL
A pinch of salt
WET INGREDIENTS
1/2 cup
milk
125 mL
1/4 cup
vegetable oil
60 mL
1
egg
1 tsp.
vanilla extract
5 mL

Directions

Step 1
Preheat oven to 180 °C (350 °F). Butter 6 muffin moulds.
Step 2
In a bowl, mix together all dry ingredients.
Step 3
Add wet ingredients and mix well. Set aside.
Step 4
Place a small cube of butter, 15 mL (1 tbsp.) frozen blueberries and 5 mL (1 tsp.) brown sugar into each cup of the muffin tray.
Step 5
Cover with cake mixture.
Step 6
Bake for 20–25 minutes (or until a toothpick inserted comes out clean).
Step 7
Serve hot with ice cream, if desired.
